Good food doesn’t need to be fussy. At The B-Side Cafe we love meals that come together fast, taste like a warm hug, and leave you energized for whatever comes next. This month’s star is a bright, Mediterranean-style sheet-pan dinner that’s gentle on the joints and big on flavor.

Recipe: Lemon-Herb Chicken with Roasted Spring Veggies
(Serves 4 — or 2 with leftovers for lunch)

Ingredients:

  • 4 boneless, skinless chicken thighs (or swap for firm tofu)

  • 2 large lemons (zest + juice)

  • 2 Tbsp fresh rosemary and thyme (or 1 tsp dried)

  • 1 lb mixed spring veggies: asparagus, baby potatoes, carrots, broccoli

  • 3 Tbsp olive oil

  • Salt, pepper, and a pinch of red pepper flakes

Instructions:

  1. Heat oven to 400°F.
